Homemade Italian Meatballs

Ingredients

Meatballs

  • 1 Pound ground pork

  • 2 Pounds ground beef

  • 5 Slices soft white bread

  • ¾ Cup heavy cream

  • ¼ Cup chopped fresh flat-leaf parsley

  • ¾ Cup grated Parmesan cheese

  • 4 Teaspoons garlic salt

  • ½ Teaspoon freshly ground black pepper

  • 3 extra-large egg, beaten

 

Instructions

  1. Preheat oven to 400˚F degrees and prepare two baking sheets with parchment paper.

  2. Gently cut crusts of the bread slices using a serrated knife. Then cut into cubes and pulse in a food processor to make fresh breadcrumbs. Place in a large mixing bowl and cover with heavy cream, stirring to make sure all the breadcrumbs have a chance to soak up the cream.

  3. Add the parsley, Parmesan, garlic salt, pepper, egg, and mix with a fork.

  4. Add the ground beef and pork to the mixing bowl, gently breaking the ground meat into smaller pieces as you add it to the other ingredients. Mix all ingredients gently but thoroughly together with a fork. Do not over mix.

  5. Portion the meatballs onto the prepared baking sheets using a large cookie scoop. Wet your hands with water and roll meatballs into 2" diameter balls.

  6. Bake for about 18-20 minutes, or until the meatballs have reached an internal temperature of 165˚F. Remove from oven and drain off any excess fat. Serve with your favorite sauce and enjoy!
